2.2.1 Campus Food Waste Tracking

Sakarya University (SAU) has established an institutional waste management system aimed at the separation, monitoring, and reduction of waste generated across its campuses, including food waste from catering services. Waste management practices in university dining halls, cafeterias, and other food service facilities are implemented in accordance with the Sakarya University Zero Waste Directive.

Article 7 of the Zero Waste Directive, adopted by the University Senate on 4 November 2021, establishes requirements for the separate collection of organic waste and food leftovers generated in dining halls, cafeterias, and tea service areas. The same article also provides for regular monitoring of the Zero Waste Management System and the maintenance of records concerning waste quantities transferred to licensed facilities and the outcomes of waste management activities.

As part of the University's Zero Waste Practices, waste is separated by type, collected, and directed to appropriate recovery or disposal processes. These practices support the University's institutional approach to the systematic management of waste generated across its campuses.

Furthermore, Article 9 of the Zero Waste Directive provides for the preparation of an annual University Zero Waste Management Report. This reporting mechanism establishes an institutional framework for monitoring and evaluating waste management activities.

The University's 2025 Catering Service Technical Specification also defines the responsibilities of the contracted catering provider regarding waste separation, collection, and zero waste practices. Accordingly, food service operations are incorporated into the University's institutional waste management framework.

Within this framework, Sakarya University has established institutional arrangements for the separate collection and monitoring of food waste generated by campus catering services. Verification of food waste quantities and measurement records for the 2025 reporting period remains necessary to assess the implementation outcomes of these practices.
